Ingredients for Tomato Chutney:

  • 4 large tomatoes, chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, chopped (adjust to taste)
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 1 teaspoon chana dal (split chickpeas)
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin powder
  • Salt to taste
  • 1 tablespoon jaggery or sugar (optional)
  • Fresh coriander leaves for garnish

Instructions for making Tomato Chutney:

  1. Prepare Ingredients:
    • Chop tomatoes, onions, and green chilies.
    • Heat oil in a pan on medium heat.
  2. Tempering:
    • Add mustard seeds to the hot oil. Allow them to splutter.
    • Add urad dal, chana dal, and a pinch of asafoetida. Saute until dals turn golden brown.
  3. Saute Onions and Chilies:
    • Add finely chopped onions and green chilies. Saute until onions become translucent.
  4. Add Tomatoes:
    • Add chopped tomatoes to the pan. Cook until tomatoes become soft and the mixture thickens.
  5. Spice it Up:
    • Add turmeric powder, red chili powder, and cumin powder. Mix well.
  6. Seasoning:
    • Season with salt according to taste. Add jaggery or sugar if you prefer a slightly sweet taste.
  7. Simmer:
    • Let the chutney simmer on low heat until it reaches a desirable consistency. Stir occasionally to avoid sticking.
  8. Garnish and Serve:
    • Once the chutney thickens, garnish with fresh coriander leaves.
